Biggest achievement in your career? Starting
work at Rogano 25 years ago and still working there now. Biggest
achievement so far was helping produce a Rogano cookery book last
year to celibrate 75 years of rogano.
Pet hate in the kitchen? Any form of
untidyness.
Favourite kitchen gadget? I open a few
thousand oysters each week so my oyster knife is never far
away!
Favourite/Least Favourite ingredient? I love
fish and shelfish and for some reason as I get a bit older I have
taken a dislike to red peppers.....
Favourite style of cooking? Like all chefs I
find food style is a form of fashion and fashions change. I like
simple cooked, simple presented food.
What famous people have you cooked for? I am
very lucky that Rogano attracts top names from all walks of life
and I really have cooked for them all.
