    A day for fish lovers! Learn how to fillet, cook and make sauce with confidence.

    Throughout the day we will show you techniques for cooking wonderful fresh seafood. The chef will demonstrate the skills for filleting and cooking the fish along with some delicious new sauces.

    Menu for 11th November 2017, 24th February 2018 and 21st April 2018:

    • Sea bream with chorizo crust and spiced beans
    • Goan Prawn Curry with Pilaf Rice
    • Thai fish cakes with sweet chilli sauce and Cucumber Salad
    • Lemon Posset with macerated fruit

    Class makes: sea bream, spiced beans, Goan Prawn Curry, Thai fish cakes

    Chef demonstrates: rice, chorizo crust,  cucumber salad, chilli sauce and lemon posset

     

    Menu for 20th January 2018:

    • Dinner rolls
    • Mussels - Mariniere, Tomato and herb, Thai chilli coconut and lime
    • Ultimate beer batter fish and chips
    • Mayonnaise for Lemon, Tartare and Garlic
    • Risotto - Fish or Seafood
    • Lemon Delicious Pudding

    Class makes: tomato and herb or Thai coconut, Fillet and grill Fish with risotto

    Chef demonstrates: Thai chilli mussels, Dinner rolls, Beer batter and Lemon delicious

     

    Menu for 3rd February 2018:

    • Grilled mackerel in dill, mustard and crème fraiche
    • Scallop with sweet potato, grilled chilli sauce
    • Monkfish scampi with herb salad
    • Chocolate, cranberry and orange brownie with ice cream

     

    Class makes: Filleting of mackerel and grilling, scallop and sweet potato and monkfish scampi

    Chef Demonstrates: herb salad, brownie and grilled chilli sauce

     

    Menu for 23rd March 2018:

    • Soda Bread
    • Scallop with sweet potato, grilled chilli sauce
    • Salmon, leek and courgette rolls with green olive sauce
    • Monkfish scampi with herb salad
    • Grilled mackerel in dill, mustard and crème fraiche
    • Brownie

    Class makes: Filleting of mackerel and grilling, scallop and sweet potato and monkfish scampi

    Chef Demonstrates: herb salad, brownie and grilled chilli sauce

     

    Menu for 31st March 2018:

    • Soda bread
    • "3" fish cakes with tarragon mayo
    • Langoustine, pea and basil risotto
    • Sea-bream fillet baked with courgette, fennel, chilli and mint
    • Buttermilk pudding with Spiced baked fruit

    Class makes: Filleting of sea bream and cook, "3" fish cakes and langoustine risotto

    Chef Demonstrates: Soda bread, fish stock and tarragon mayo

    Format

    Our full day classes offer you the chance to spend a day in the kitchen with our expert chefs where you will learn how to cook a range of delicious dishes from your chosen theme.

    Your day begins in our dining room where you will have the chance to meet other guests in class while enjoying with tea/coffee and a scone.

    You will then move through to the kitchen where our chef will begin to demonstrate your chosen dishes. Each guest has their own individual state of the art cooking station where they recreate the dish our chef has demonstrated. Our chef will be on hand throughout the day to assist.

    Once you've finished cooking in the afternoon you will have the chance to sit down, relax and enjoy a two course lunch which you will have made along with a glass of wine.

    Timing: 9.45am and finish around 3pm.
